A quick tomato and lentils soup
Quick and easy.
3/4 cup Rupanyup Wimmera Grain Store Red Split Lentils .
1 large celery stalk chopped.
1 onion peeled and chopped.
420 g can of SPC chopped tomatos
2 Tble spoons of tomatoe paste
1 Vegetable stock cude
2-3 Cups Boiling Water
2 Tble Olive Oil
Greek Yogurt and/or fresh parsley to finish
Place olive oil in fry pan and salute onion garlic and celery.
Once soft add Red Split Lentils and canned tomotoes, boiling water, stock cube and tomato paste.
Cook approx 15- 20 minutes until lentils soften.
Season to taste and serve with parsley and or yogurt .
Variations; Add roasted capsican and /or chilli. Or bacon/ham for those who desire a little meat.
