1/2 to 1 hour. Plus soak overnight
Have your chickpeas ready to go.
1 cup of dried Wimmera Chickpeas
Prepare 1 cup of kabuli chickpeas by soaking in plenty of cold water overnight in the fridge.
Drain and discard the soak water then add 3 times their volume in cold water (ie 3 cups), bring to the boil and simmer for 30 minutes for an “al dente” or for a raw nutty finish. Or simmer for 1 hour for a tender/softer finish.
Time Poor ?: If you would like chickpeas on hand for immediate use then when cooking make a big batch and freeze the extra.
