Groovy Grain Salad
Introduction
A tasty and filling salad with a little bit of everything !
Ingredients
3/4 cup cooked WGS French Green Lentils
1/3 cup chopped parsley
1 cup cooked brown rice
1/3 cup finely chopped shallot
1 cup cooked quinoa
1/3 cup chopped coriander
1/4 cup olive oil
1/3 cup currents
2 tbls lemon juice
Add handful of toasted pine nuts toasted almonds slivers
Steps
1. Cook lentils, rice and quinoa.
2. Mix cooked lentils, rice and quinoa in salad bowl.
3. Chop and add parsley, coriander, shallots and currents.
4. Mix oil and lemon juice and add to salad. Toss and combine.
5. Add toasted pine nuts and almond silvers to salad if desired.
