Miranda's Veggie and Lentil Soup
Introduction
A hearty and filling soup.
Ingredients
1 cup of WGS green lentils
1 brown onion, finely chopped
2 garlic cloves, finely diced
2 carrots peeled and diced
3 Stalks of celery
400g can of diced tomatoes
2 tablespoons light olive oil
Add vegetable stock cube
Salt & Pepper .
Top with parmesan cheese
Steps
1. Wash lentils under running water. Drain well. Place in a large saucepan and cover with water. Bring to boil on high heat.
2. Cover with 8 cups of water and bring to boil again on high. Add remaining ingredients except parmesan. Season to taste. Cover and simmer for 1 hour, until the lentils are tender and the soup has thickenend slightly.
3. Serve with grated parmesan and chopped celery leaves if you like.
