Miranda's Veggie and Lentil Soup

A hearty and filling soup.


  • 1 cup of Wimmera Green Lentils

  • 1 brown onion, finely chopped

  • 2 garlic cloves, finely diced

  • 2 carrots peeled and diced

  • 3 Stalks of celery 

  • 400g can of diced tomatoes

  • 2 tablespoons light olive oil

  • Add  vegetable stock cube (optional)

  • Salt & Pepper .

  • Top with Parmesan Cheese (optional 3)

Miranda's Veggie and Lentil Soup


Wash lentils under running water. Drain well.  Place in a large saucepan and cover with water. Bring to boil on high heat.

Cover with 8 cups of water and bring to boil again on high.  Add remaining ingredients except parmesan.  Season to taste. Cover and simmer for 1 hour, until the lentils are tender and the soup has thickenend slightly.

Serve  with grated parmesan and chopped celery leaves if you like.
