The rich soils of the Wimmera /Mallee can grow some of the highest quality and diverse range of lentils in the world.
Black lentils are uniquely grown in the Wimmera and are a rare treat with their stunning shiny black coat. They get their name from Mt Byron in the Black Ranges of the Wimmera where these lentils are farmed.
High in plant protein, fibre and naturally gluten free, these lentils do not have any add sugar, dairy or preservatives and they are not genetically modified.
This style of lentil, the black lentil is also a rich source of antioxidants.
Lentils are a relatively inexpensive food and are a great way to cater for families with a diverse range of dietary needs eg vegan, vegetarian, flexitarian to gluten free*.
They can be milled, roasted, puffed, spouted, soaked and put in cans/ jars etc. Then turned into dips, soups, salads, pies, sausage rolls, a meal on their own with some delicious veggies or as a compliment to meat dishes etc depending on your diet. There are endless opportunities to create with these lentils.
Lentils can be stored in your pantry for months and are handy to have on hand just like rice and pasta (but packed with a few more nutrients!)
Dried lentils take on the flavours of what they are cooked with, lending them to being a very tasty ingredient to some fabulous dishes.
They also expand in volume when cooked. One cup of dried lentils can make two cups of cooked, making meals go further for larger families or those on a tight budget.

Uses
Great for salads, sides, casseroles or braised to accompany poultry, lamb or sausage.
Lentils do not require soaking before cooking. Quick to cook these lentils are ready in just 10-15 minutes and hold their shape well, developing a deep olive colour when ready, which contrasts beautifully with fish, poultry and in salads.
