This fun taco dish is both healthy and delicious. Serve with your favourite taco fillings, such as sour cream, chopped tomatoes, shredded lettuce, avocado and cheese. Weight: 280 g Serves: 4 No added colours, flavours, or preservatives You will Need: 2 TBS Olive Oil, 1 med onion - diced, I large red capsicum - diced, 2.5 cups vegetable stock, half jar Salsa, optional – can of black beans, 12 taco shells, taco .


1. Heat oil in a large pan over medium high heat. 2. Add onion and capsicum and sauté for 5 minutes – stirring. 3. Add contents of bag - mix and stir. 4. Add stock, bring to boil. Cover and lower heat so it’s gently simmering until lentils are tender, about 40-45 minutes. 5. Stir in salsa and black beans if using. Mash lentils slightly. 6. Serve lentil mixture in each taco shell. Top with favourite taco toppings.
